Salt Cod is preserved by drying and salting the fresh fish for a period of time. It is more intensely flavored than fresh Cod, but retains its deliciously firm, large white flakes.
Soak Salt Cod in cold water for one to three days, changing the water two to three times a day. Then simmer it directly in sauces, batter and fry it, or boil it and prepare it as a salad with garlic, celery, olive oil and lemon.
